It also has nothing to do with cheap price - as someone who grew up with quality Mexican food close to the border, I have been to incredible cheap Mexican restaurants and terrible high end Mexican restaurants.
I ordered the L1 special, the two enchiladas with rice and beans, one beef, one cheese.
The enchilada sauce tasted almost like it had too much tomato paste in it, I felt like it was the tomato sauce from an Italian restaurant - I couldn’t taste the chiles that had that the wonderful flavors. It wasn’t completely inedible, but pretty mediocre. I don’t know if the sauce was made in-house or bought.
Typically I don’t like chips that are over salted but this was the other end of the spectrum with absolutely zero salt.
Fix these problems and you’re on your way to a more authentic Mexican restaurant.
