The restaurant's name is a blending of the chef-owner’s first name and the work that made her famous. The local press has been raving about this award-winning restaurant since it opened calling it, Mecca of Pizza and one of the 101 pizzas in America.We ordered Roo’s, a vegetarian pizza of cheese, mushroom, and herbs, where the simple list of ingredients would leave the maker with no place to hide.The first thing I noticed was the crust. I’d be satisfied eating an all crust pizza and nothing more. Instead of using thick slabs of tasteless, soggy mushrooms, she had chopped multiple types of mushrooms and roasted them to perfection before using them as a topping. The mixture of herbs, including roasted fennel, was a welcome change from the overpowering mix of dried Italian spices common to American pizzas. The cheese was a mixture of mozzarella, fontina, and parmesan. With each bite, I tasted the crust, the cheese, the vegetables, and the herbs.The restaurant located in a shopping center off highway 101 has plenty of parking and multiple electric car charging stations.
