Running a successful restaurant is serious business. Planning and coordinated business management is key. I love the history of the restaurant and grew up eating at Pearlies. Yet, from review of their menu, it's obvious that too many items are on the menu, the operating time is restrictive, not to mention the delivery service with short staff. Narrow down your menu focus to only a few specialty items, offer bottled and can cold drinks, and seek business advice with a business consultant so your restaurant can succeed. Best of luck
