The crust struck the rare balance between crisp and chewy, with just the right amount of char from the wood-fired oven. You can tell they let the dough ferment properly — it had that beautiful tang and airiness that only comes with time and care.
We tried the classic Margherita and a specialty pie with prosciutto, arugula, and a drizzle of truffle oil. Both were out of this world.
