As a Kansas Citian, I take BBQ as serious as most people take religion. I was skeptical when family said this place was so good, but reluctantly went along having been disappointed by other BBQ joints here in Springfield. When we arrived and got out of the car in the parking lot, I watched someone tend to UDS smokers outside and smelled the post oak smoke. This raised my hopes for a good experience.
First, we ordered the BBQ nacho wonton chip appetizer. I was blown away by how great it was. The sauce was perfectly applied and not overbearing, which is my preference and bode well for the absence of sauces on the table. Normally I will order my BBQ with sauce on the side for places that like to drown their meat in sauce (Gates in KC comes to mind for doing this).
I ordered the burnt ends, as they're typically not done well outside of Kansas City. The burnt ends served here beat every Kansas City bbq joint I've ever been to. They were clearly from the point of the brisket, where some places cheat and cube portions of the flat to serve as burnt ends. They were also perfectly tossed in a light amount of sauce that didn't oberbear the excellent rub and beefy flavor of the burnt ends. They were also cooked right - tender and moist.
The rub was well balanced between sweet and heat, and also lightly applied to the battered fries. Price-wise? It's BBQ, expect to pay the average price you'd see at any other BBQ place. Our server was also quite excellent, keeping our party of 6 glasses full and catering happily to our asks.
10/10 would recommend.
