We opted for the 11-course tasting menu, which showcased the best of Colombian cuisine with a modern twist.
The journey began with the truffle bañuelos, a delightful explosion of flavour that set the tone for the evening. Next up, the caviarmañolas, a must-try dish that perfectly combined the richness of caviar with the comforting warmth of Colombian flavours.
The lulo yellowtail ceviche was undoubtedly the highlight of the evening for me, with its fresh and tangy flavours dancing on the palate. And who could forget the smoked wagyu nigiri, a true indulgence that left us craving for more.
After we moved to the signature dishes, each one was a revelation in itself. The onion soup, served hot and cold, was a testament to Chef Juanma Barrientos' innovative approach to culinary artistry. The tree of life, crafted from yuca and queso fresco made into bread, was a visual and gastronomic marvel that left us in awe.
Moving on to the main courses, the halibut fish, wagyu striploin, and BBQ ribs were cooked to perfection, each bite bursting with flavor and tenderness.
And for dessert, the merengon and oblea provided the perfect sweet ending to an exquisite meal.
Throughout the evening, the impeccable service and attention to detail further enhanced our dining experience. The staff's passion for food and dedication to excellence were evident in every interaction, making us feel truly pampered and appreciated.
