I'm not one to rush into reviews. When possible, I like to visit establishments more than once to help form knowledgeable opinions about a business and products offered. This is a cumulative review over the course of the last 2 years and a handful of visits. In my opinion, great bbq is one of the most difficult foods to produce consistently. Since multiple factors come into play every day (humidity, weather temperature, cook temperature, meat prep, meat quality, cook time, etc.), places that can do it day in and day out are few and far between. For the most part, this place is good. My issue is with the lack of consistency as it relates to the meats. On a previous visit, the pork rib texture was some of the mushiest I've ever experienced, the brisket smoke ring was not very pronounced, and brisket looked overall lackluster. On a recent visit, the brisket resembled chipped beef when slices were being cut and assembled for the order (see picture of brisket in the foil pan). The same brisket was mushy, had no tug, and could not support itself under its own weight. The flavor of the brisket and aforementioned ribs tasted washed out as well. I'm not sure if the overcooked/mushy texture is due to excessive cook time, how the product is maintained in the food warmer, or if there's a different reason. This might not matter much to the patron that just goes to order a brisket sandwich doused in sauce, but for a fan of the TX bbq trinity, someone that's been to many of the top places in the state over the last decade, and someone that buys quite a bit of bbq during a single visit, this can be quite a letdown. Especially when a patron spends $100-200 to buy extra meat to share with additional family and friends. The above said, when this place is on, I feel they can produce some of the best brisket in the state of Texas (see picture of to-go box with brisket and sausage). The bark can be flavorful and smoke ring fantastic. The sausage and pork chops are juicy and flavorful as well. Prices have increased (picture of 2023 and 2024 price boards attached), and it does seem to be one of the more expensive restaurants per pound of meat around, but price increases seem to be everywhere. As far as wait times, they seem to have increased with the restaurant popularity, so I would recommend lining up at least 45 minutes before business open.
