Being from Mississippi, I might be supposed to know a little about fried Delta catfish. I found the catfish perfectly cooked, coated in a seasoned cornmeal and fried slightly crispy while retaining a tender inside texture. The "catfish on a bun" (otherwise known as a catfish po-boy) had a generous portion of fish, two large filets that overlapped the bun. Served with a slathering of tartar sauce and jalapenos, it was a very satisfying meal. The fish came out piping hot, clearly having been started in the fryer only once I'd ordered. Similarly, the french fries were crispy golden outside with a fluffy inside, just as they should be, served hot. The fish was seasoned with a little salt and black pepper, just the way it's done in the Delta. The staff were efficient, friendly, and came by a couple of times to make sure I was enjoying my lunch, which I assuredly was!
