It's a scotch bonnet based sauce, no preservatives and man it packs a punch. It hits hard at first, but slow burns into a taper, revealing the flavour of the bonnet pepper. I sampled the sauce alone (no food) before deciding to use it. Once I sampled it, I had to purchase a bottle for myself (which as far as artisan sauces go, $5.00 USD is a lot of bang for your buck).I've never had Jamaican food at all. Ever. The closest I have ever come were Jamaican jerk wings at Buffalo wild wings. That wing sauce was GARBAGE compared to REAL Jamaican jerk chicken. Everything, the rice, cabbage, plantains, all served to support the chicken which was the star of the show. When I added the hot sauce to the meal....
