This was my first ever experience doing something like this. Honestly, I waited all this time because of this dude back in my culinary class in 2008. He had always talked and showed his experience in the class of new and different techniques and flavors that come with cooking. I still remember that first day in introduction 1, some tattooed skinny, shaved faced skater dude in the back of class. Philip.... you have eyes and ears of a snake, picking out the right crew to handle your restaurant. I'm so proud of you, dude. Keep it up. As for the crew that night. Best experience ever. From ringing on the doorbell, the waiting room area, the smile on everyones face,(expect for one dude. I tried hard breaking a smile on him, but he wouldn't budge) knowing that they love doing this job and to my little doggie bag on the way out. I felt like Remy from Ratatouille with all these combinations of flavor and textures. It was a fireworks in my mouth. Thank you so much again for this experience.
