A Festive 4th of July Feast at Cocina Azul in Albuquerque
Traveling to Albuquerque on the Fourth of July, I was looking for a memorable meal to celebrate the holiday, and an AI app recommended Cocina Azul based on glowing reviews. I’m glad I took the suggestion — this place truly exceeded my expectations.
I ordered the Christmas Enchiladas, a name inspired by their vibrant red and green chile combination. The menu offered an impressive variety of meats for the enchiladas, from tender brisket to flavorful carnitas — a rare find and a delightful twist on traditional Mexican fare. The portions were generous, leaving me satisfied and craving more.
The heat level was above average but perfectly balanced with the rich, smoky NM chiles — absolutely unbeatable. Be warned: the heat might burn twice in, and out, but it’s worth it for the delicious experience! The flavors were authentic and robust, making each bite a true celebration of New Mexico’s legendary chile.
Juan, the chef behind the magic, is Juan in a million — an outstanding cook who clearly puts his heart into every dish. The staff was cheerful and upbeat,
and our server Champagne was the star of the show. She was fun, knowledgeable about the menu, and had a great personality that made the whole dining experience even more enjoyable.
Overall, Cocina Azul provided a fantastic dining experience, and I’ll definitely be returning. Celebrating Independence Day here made the holiday even more special — I couldn't have asked for a better meal or a happier ambiance.
